Happy Autumn! It’s the first day of Fall, time for an onslaught of squash, trick-or-treaters, scarecrows, jack-o-lanterns and vibrant autumn colors. It’s today that we say “farewell” to summer sweetness and “hello” to a fall harvest. Perfect for Fall, Corn gives us festive decoration and well rounded nutrition. We’re embracing all types of corn as a foundation for the Autumn season and embellishing with local seasonal flavor.
FRESH CORN: Corn Chowder Salad Who doesn’t love corn chowder? But this early in the season, a hot dense soup is a little too heavy for late September humidity. Try this twist on corn chowder, using fresh potatoes, onions, and bacon to make a simple salad reminiscent of a traditional chowder. Salty bacon makes it delightfully decadent, for a vegan twist try using tempeh bacon.
CORN TORTILLAS: Butternut Squash Enchiladas This recipe mixes the perfection of enchiladas with seasonal fall squash making a doubly perfect recipe. Calling for roasted butternut, don’t hesitate to try mixing it up with delicata, mini blue hubbard, red kalli, even pumpkin! With black beans, avocado and a roasted red tomato sauce, these merge staples and seasonal goods for a truly festive feast!

POPCORN: Pumpkin Spice Popcorn Yes, we went there. A Fiddleheads Original Recipe, we’re cashing in on this pumpkin spice trend with a delicious twist. Mixing sweet maple syrup, pumpkin pie spice, and applewood smoked sea salt, this popcorn has a kettle corn flavor with a fall twist. If sweet is not your style, try using a smoked sea salt, with fresh herbs and flavorful olive oil for a savory version. We used our pop-corn-on-the cob in the microwave, but bulk popcorn kernels are a fun way to make popcorn in a pan on the stove.
